Antoine and Quentin are the eighth generation in a family of grape growers. Born and raised in Bouzy, one of the most prestigious Grand Cru of Champagne, they were exposed to wine and Champagne tasting at an early age.
Quentin is a graduate with a Bachelors in Management and a Master in Wine and vinification from one of the best wine schools in France, the Bordeaux International Wine Institute. Quentin promoted French wine in America, worked as wine shop manager in China and finally came back to his bubbly home. Antoine, graduate from Business School from Dijon, Burgundy also obtained a master in wine marketing. Antoine traveled and worked in Argentina and England to promote the Champagne Pierre Paillard.
The Paillard family has owned vines and made wine in Bouzy for 8 generations. Today, more than 200 years of experience make us proud and allow us to offer a range of Grand Cru Champagnes hallmarked with all the necessary expertise and control to create the very finest Champagnes. The Pierre Paillard vineyards are situated in their entirety in Bouzy, which was granted Grand Cru status in 1935. It is made up of 11 hectares, of which 60% are planted with Pinot Noir and 40% with Chardonnay. The average age of the vines is 32 years and the plants come from our own family selection, cloned using the massale selection approach, indicating careful monitoring on both a varietal and organoleptic level.
For more than 15 years now, sustainable viticultural practices have been adopted in the vineyard, including controlled cover planting and selective nutrient supplements.
All their Champagnes boast Grand Cru status, since they are made exclusively from grapes grown in their Grand Cru vineyards in Bouzy. The wines are vinified in stainless steel tanks for a period of 8 months, and then allowed to age in their cellars for 3 years for the brut, and 6 years for the vintage wines. These extended ageing periods are vital to obtain the balance, finesse and elegance, which are the hallmarks of Pierre Paillard Champagne.
